I gave it a go but this is what popped up.

The reason I would like to use a VM is because my physical Windows computer likes to randomly shut down for updates. Has anyone had any success in mitigating this automatic shutdown feature?

Try googling or ask chatGPT how to disable Auto Update in Windows 11 (or the version you have).

This is pretty surprising. You should definitely be able to run WL in the virtual machine. Please double check your credentials: most likely they were entered incorrectly and your license could not be obtained, so evaluation wasn't allowed.

I started doing it on an Amazon virtual machine without issue but ended up not wanting to fork over the money for processing power.
