How can I update WealthLab 8 without losing my customized settings and data, and is it possible to install multiple versions concurrently for testing new features without affecting my current setup?

You never lose your data or settings when upgrading to a newer build, unless it contains a breaking change (very rarely, and announced).

If only in a different Windows user account (on the same machine).

Unfortunately during a WealthLab update the follwing files are overwritten (at least this is the behavior in my PC):

market.txt, symbol.txt,...

The IB extension update overwrites:
IBDefaultmarkets.txt, IBcontracts.txt,...

To edit the content of IBcontracts.txt is necessary to trade European stocks via IB. Hence it is a little bit cumbersome to save and restore the relevant *.txt files during every update.

I can only respond that you are mistaken, and that you would be well-served to update your old installations of WealthLab 8.

Long ago there may have been a build of the IB Provider that overwrote those files by necessity, but it would have been long ago.
Keep up with the updates - at least stay within 1 month of the last update if you're concerned with a breaking change.

What I described, was the result of the update I did yesterday:
from IB extension 43 to build 47
and WL8 from 81 to 87.

Both around 5 weeks old

I will try to do the next update immediatly.

It's specifically programmed not to overwrite existing files. It will install the files only.

Did you "Set Data Folder Location" to a non-default folder?
Maybe this is the scenario that's the problem.
